Maple syrup production is still a way of
life for many families in the local area. As spring
approaches, activity begins with checking all the equipment to see
if its already to go. Times have changed somewhat over the years in
that many now have gone to oil or gas fired arches to boil down the
sap.
One of my fondest memories of sugaring years
ago was the taste of fried bologna at lunch time after the morning
was spent gathering sap. We used to place one of the metal lids up
tight to the arch, which provided enough heat to fry up a meal.
We happen to live in St.Lawrence County where
many are still active. There are maple queen contests and events
throughout the year. The St.Lawrence County Maple Producers have
tours to different facilities to see how maple syrup is produced.
Anyone that has taken part in the production will tell you it's hard
work, but the feeling you get when you draw off that first quart
makes it all worth while.
